Chestnut Mushroom
(Pholiota adiposa)
Whole edible mushroom. Also called Chestnut mushroom due to its chestnut color.
A cousin of the Nameko mushroom (Pholiota nameko). It forms dense clusters of beautiful, dark orange mushrooms with a slightly shaggy “cap”. Unlike Nameko, it does not have a mucous layer on its cap.
It is valued for its taste and consistency, which makes it often used in soups, sauces and stewed dishes.
CHARACTERISTIC:
Crispy, crunchy consistency. Mild in taste with a distinct buttery and nutty aftertaste.
